30 Month Parmesan

This cheese is selected from one small parmigiano-reggiano farm just outside parma; one of only four producers still to use milk from the ‘italian brown’ cow.  this ancient and rare breed produces milk with an intense flavour, which gives this parmesan a particular fruity richness.

Aged to perfect ripeness in the courtyard dairy’s maturing rooms, baron bigod is britain’s first unpasteurised brie to be made on the farm in traditional large (3kg) wheels, and ladled by hand.  the french are jealous… makers of baron bigod, jonathan and dulcie crickmore have been dairy farmers all their lives at fen farm dairy in suffolk.

Beenleigh Blue

Originally based on a roquefort recipe, beenleigh blue cheese turned out quite different: with a delicate sweetness and minerally, floral flavour to balance the blue undertones. robin congdon started farming in the 1970s with 30 sheep.

Berwick Edge

Berwick edge is northumberland’s version of aged gouda. it is made by hand by the maxwell family, following traditional dutch methodology, using fresh raw milk from their own herd of cows.

An iconic farmhouse british cheese, this is scotland’s answer to roquefort; the rich sheep’s milk complemented by a strong, powerful blue veining.  lanark blue was created in the 1980s and has become a modern classic.

Cais na Tire Sheep

Barry & lorraine cahalan make this unique cheese with sheep’s milk from on their small farm in county tipperary.  cáis na tíre is aged on-site until it’s six months old.

With the price of wholesale milk falling, the davenports took a short course in cheese making and invented britain’s first unpasteurised soft blue-brie: cote hill blue. mary and michael davenport are small tenancy farmers of cote hill farm in lincolnshire, with only 63 cows’ (including some of the unusual red poll breed which has a rich milk).
